                    Preparation Method :
- Place the garlic and egg yolks in a food processor and process until smooth.
 - With the motor running, pour in the oil, a little at a time, until the mixture begins to thicken.
 - Pour in the remaining oil in a thin stream until a thick mayonnaise forms.
 - Add the lemon and lime juices, mustard and tarragon.
 - Adjust seasoning with salt and pepper to taste and then serve.
 
INGREDIENTS
- 150 ml extra-virgin olive oil
 - 1 tablespoon lemon juice
 - 1 tablespoon lime juice
 - 3 large garlic cloves, finely chopped
 - 2 egg yolks
 - 1 tablespoon Dijon mustard
 - 1 tablespoon chopped fresh tarragon
 - Salt and pepper, to taste
 - 1 fresh tarragon sprig, to garnish
