TOMATO AND AUBERGINE SALAD

Do you think a different kind of salad can be prepared only with exotic vegetables? No... not at all. This recipe involves ingredients which are easily available like Egg- plant, Tomato and onion. It is simple to prepare but need time to prepare as slow cooking brings out best flavours from the ingredients. So when you are not in hurry try this delicious salad.

10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Cut the aubergines into 1inch cubes. Place in a colander, sprinkle with salt and leave for 30 minutes. Rinse and dry with kitchen paper.
  • Heat the oil in a frying pan, add the onion and aubergine and fry for 10 to 15 minutes, stirring occasionally, until golden.
  • Add the garlic and tomatoes and fry for 2 to 3 minutes.
  • Leave to cool, and then mix with the parsley, lemon juice, and pepper to taste.
  • Arrange the lettuce leaves in a serving dish and spoon the salad into the centre.

INGREDIENTS

  • 4 aubergines
  • Salt
  • 8 tablespoons Cooking oil
  • 2 onion, peeled and chopped 
  • 4 cloves garlic, peeled and finely chopped
  • 8 tomatoes, skinned, deseeded and chopped 
  • 4 tablespoons chopped parsley
  • 2 tablespoon lemon juice 
  • Freshly ground black pepper
  • Lettuce leaves
