STUFFED TOMATO SALAD

The stuffed Tomato Salad recipe is purely made of high class tomatoes. This ingredient is very healthy since it provides many health benefits such as skin rejuvenating and improves your digestive system. It is also easy to prepare, by just following the instructions.

Preparation Method :

  • Cut the tops off the tomatoes and set aside. Scoop out the centers of the tomatoes, then turn them upside down and leave to drain.
  • Mean while, chop the apple and discard the core. Put the apple in a bowl, sprinkle with the orange rind and juice, and then add the remaining ingredients, except the lettuce. Fold gently to mix.
  • Divide the mixture equally between the tomato cups. Arrange the lettuce leaves on individual serving plates.
  • Place a tomato on each plate and top with the reserved lids.
  • Serve cold.

INGREDIENTS

  • 8 large medium tomatoes
  • 2 dessert apple
  • Finely grated rind of 2 orange
  • Juice of 1 orange
  • 500 grams cottage cheese
  • 4 tablespoons sultanas
  • 4 tablespoons chopped walnuts
  • 2 tablespoons snipped chives or finely chopped
  • Spring onions
  • Salt
  • Freshly ground black pepper
  • 2 small lettuces
