Preparation Method :
- Place the cucumber in a glass bowl with the sugar and vinegar.
- Turn the cucumber until coated, then leave, covered, for 10 minutes.
- Rinse the cucumber slices under cold water, then drain. Place in a salad bowl with the spring onions (scallions).
- Mix together the salt, pepper to taste, yogurt and cumin, and then pour over the cucumber.
- Mix gently then chill for 2 hours (or more) before serving.

- 1 cucumber, finely sliced
- 2 teaspoon sugar
- 2 teaspoon wine or cider vinegar
- 4 spring onions, chopped
- 1 teaspoon salt
- Freshly ground pepper
- 300 ml plain yogurt
- ½ teaspoon cumin seeds, ground
