SPINACH AND BACON SALAD

- Finely chop the bacon and place in a heavy-based frying pan (skillet) over a low heat. Cook slowly until the fat begins to run and bacon pieces are crisp.
- Meanwhile wash and drain the spinach, removing white stalks and tearing the green part into smallish pieces.
- Place in a serving bowl. Heat the oil and butter in another pan and when foam subsides, cook the bread, turning frequently, until crisp.
- When the salad is ready to serve, add the croutons to the spinach then pour on the hot bacon and fat.
- Quickly toss and serve.

- 500 gram fresh spinach
- 2 tablespoon Cooking oil
- 30 grams butter
- 2 slice white bread, diced
