SMOKED TROUT SALAD

Preparation Method :

  • Combine orange and lemon juice in a saucepan and bring to the boil over medium heat. Remove from heat and let cool. Stir in oil and shallot to make a dressing. Season to taste with salt and pepper.
  • Put watercress in a bowl and pour over all but 2 Tablespoon of dressing. Toss to coat evenly. Divide watercress evenly among chilled individual bowls or plates.
  • Break trout into pieces and arrange on top of greens. Drizzle each serving with a little dressing. Garnish each salad with an orange segramsent or two and serve at once.

INGREDIENTS

  • 200 ml orange juice
  • 100 ml lemon juice
  • 2 Tablespoon sesame oil
  • 2 teaspoon finely chopped shallot
  • 4 bunches watercress, stemmed
  • 200 grams smoked trout
