SMOKED MACKEREL, POTATO AND EGG SALAD

Preparation Time :
45 minutes

Preparation Method :

  • Cook the potatoes in their skins in boiling salted water for about 20 minutes, until just tender. Drain and peel while hot and slice thinly.
  • Place in salad bowl with the eggs, onion, shallot, herbs and salt and pepper to taste. Flake the mackerel into bite-size pieces, discarding skin and any bones, and add to the bowl.
  • Mix the oil, vinegar and cream together with a fork, pour over the mixture in the bowl and fold in gently, taking care not to break the potatoes and eggs.
  • Serve Immediately.

INGREDIENTS

  • 1 kg waxy potatoes 
  • Salt
  • 4 hard-boiled eggs, thinly sliced 
  • 2 onion, peeled and very thinly sliced
  • 2 shallot, peeled and very thinly sliced
  • Few sprigs each parsley, tarragon and chervil 
  • Freshly ground pepper
  • 2 smoked mackerel fillet
  • 6 tablespoons Cooking oil
  • 3 tablespoons vinegar
  • 2 tablespoon single cream
