SHRIMP SALAD PINWHEELS

Preparation Method :

  • The Shrimp Salad: Drop the cheese in a bowl and beat until smooth.
  • Stir in the shrimp, celery, mayonnaise, tomato puree and dill. Add lemon juice, salt and white pepper to taste. Cover and chill until required.
  • The Shrimp Salad Pinwheels: Trim the crusts off the bread and cut each slice into rectangles. Flatten each slice using a rolling pin.
  • Press 2 slices together at the short ends, squeezing to seal the edges; repeat to make 3 more long slices.
  • Spread the slices very lightly with butter, then top with the shrimp mixture, taking it to the edges.
  • Tightly roll up each bread, starting at a short end; repeat with the remaining 3 long slices.
  • Wrap each slice very tightly in plastic wrap and chill for at least 1 hour.
  • While serving remove from the refrigerator slice off both ends thinly to neaten, then cut 8 slices from each roll.

INGREDIENTS

  • 50 grams full-fat soft cheese
  • 150 grams canned shrimp, drained, rinsed, and finely chopped
  • 1 teaspoon very finely chopped fresh dill
  • 6 slices white or whole-wheat bread
  • 1 stalk celery, very finely chopped
  • 1 tablespoon mayonnaise
  • 1 teaspoon tomato puree
  • Unsalted butter, softened
  • Lemon juice, to taste
  • Salt and white pepper, to taste
