Preparation Method :
- Place the scallops and white fish in a saucepan. Poach in the minimum of water for about 4 to 5 minutes until tender. Drain and cool.
- Flake the fish using a fork. Cut the scallops into small pieces.
- Add the prawns to the fish mixture. Mix the mayonnaise, tomato puree, and basil, salt and pepper together, and then stir into the fish.
- Place the shredded lettuce on a serving dish and surround with the tomato quarters.
- Spoon the fish mixture into the centre of the dish.

- 8 scallops, dark beards removed
- 200 grams white fish
- 200 grams peeled prawns
- Shredded lettuce leaves
- 15 tomatoes, skinned and quartered

- 250 ml reduced-calorie mayonnaise
- 2 dessertspoon tomato puree
- 2 teaspoon chopped basil
- Salt
- Freshly ground black pepper
