SEAFOOD COCKTAIL SALAD

Preparation Method :

  • Place the scallops and white fish in a saucepan. Poach in the minimum of water for about 4 to 5 minutes until tender. Drain and cool.
  • Flake the fish using a fork. Cut the scallops into small pieces.
  • Add the prawns to the fish mixture. Mix the mayonnaise, tomato puree, and basil, salt and pepper together, and then stir into the fish.
  • Place the shredded lettuce on a serving dish and surround with the tomato quarters.
  • Spoon the fish mixture into the centre of the dish.

INGREDIENTS

  • 8 scallops, dark beards removed 
  • 200 grams white fish 
  • 200 grams peeled prawns 
  • Shredded lettuce leaves 
  • 15 tomatoes, skinned and quartered 

Sauce

  • 250 ml reduced-calorie mayonnaise
  • 2 dessertspoon tomato puree 
  • 2 teaspoon chopped basil 
  • Salt
  • Freshly ground black pepper
