GRILLED CAPSICUM AND ANCHOVY SALAD

Preparation Method :

  • Add penne or spiral pasta to a large pan of rapidly boiling water and cook until just tender.
  • Drain pasta immediately and rinse well under cold water. Peel onion and chop finely.
  • Cut capsicum in half and remove seeds and membrane.
  • Place them cut side down under a hot grill and cook for 6-7 minutes or until skin is blistered and black.
  • Transfer to a plate and cover with a damp tea towel.
  • When they are cool, peel the skin away and cut capsicum flesh into thin strips.
  • In a large salad bowl, combine pasta, capsicum Strips, onion, parsley.
  • Anchovies, oil, lemon juice, salt and pepper. Toss until well combined and serve immediately.

INGREDIENTS

  • 500 grams penne or spiral pasta
  • 1 small red onion
  • 2 large red capsicums
  • 200 grams  fresh flat-leaf parsley leaves
  • 2 anchovies, whole or chopped
  • 50 grams Cooking oil
  • 2 ¼  tablespoons lemon juice
  • Salt and pepper, to taste
