GOLDEN SALAD

Preparation Time :
25 minutes

Preparation Method :

  • Toss the oranges, apples, celery and walnuts in the orange dressing, stir in the mackerel.
  • Line a serving platter with the lettuce leaves and spoon the salad over them. Garnish with the orange slices.

INGREDIENTS

  • 500 grams smoked mackerel fillets, skinned and sliced into 4 pieces
  • 2 large oranges, peeled and divided into segraments
  • 2 dessert apples, cored and thinly sliced
  • 2 young celery sticks, thinly sliced
  • 2 tablespoons walnut halves
  • Lettuce leaves
  • 4 thin orange slices, to garnish

Orange Dressing: Mix all together

  • 50 ml orange juice
  • 3 teaspoon clear honey
  • 2 tablespoons tomato juice
  • 1 teaspoon grated orange rind
  • 2 tablespoons finely snipped chives
  • Large pinch of cayenne pepper
