DANISH HERRING SALAD

Serves :

Preparation Time :
20 minutes

Preparation Method :

  • Put the beetroot, apples and onion in a bowl. Stir the lemon rind and juice into the yogurt, and then add salt and pepper to taste.
  • Add the yogurt to the beetroot mixture and stir well until the salad is pale pink in color.
  • Spoon into a shallow serving dish, arrange the herrings or roll mops on top, then garnish with parsley sprigs.
  • Serve cold. 

INGREDIENTS

  • 500 grams beetroot, cooked, peeled and diced
  • 4 dessert apples, cored and thinly sliced
  • 2 onion, peeled and thinly sliced 
  • Finely grated rind and juice of 1 lemon 
  • 300 ml plain low-fat yogurt 
  • Salt
  • Freshly ground white pepper
  • 8 pickled herrings or roll mops 
  • Parsley sprigs, to garnish
