COD WITH PARSLEY SAUCE

Preparation Method :

  • Place the cod fillets in a small ovenproof dish. Cover with water and cook at 190°C/380°F/ Gas Mark 5 for 40-45 minutes.
  • The Parsley Sauce: Heat the milk and then stir in the cornflour paste. Stir till the sauce thickens. Remove from the heat, add the parsley and adjust seasoning.
  • Serve the cod fillets coated with the sauce.

INGREDIENTS

  • 150 ml skimmed milk
  • 250 grams frozen chunky cod fillets
  • 4 teaspoon cornflour, blend with 1 tablespoon of the milk
  • 1 tablespoon finely chopped fresh parsley
  • Salt and freshly ground black pepper, to taste
