CAULIFLOWER AND SEAFOOD SALAD

Preparation Time :
45 minutes

Preparation Method :

  • Drop the cauliflower florets into boiling salted water and cook for 2 minutes. Drain, cool under running water, and drain again. Place in a large bowl.
  • Drain the canned fish, remove any bones and break into lumps.
  • Add to the cauliflower with the other seafood, onions, herbs, salt and pepper to taste, mayonnaise and vinegar. Fold lightly together.
  • Serve on a bed of lettuce, sprinkled with parsley and garnished with tomatoes.

INGREDIENTS

  • 500 gram cauliflower, broken into florets
  • Salt and freshly ground pepper
  • 200 gram crabmeat, salmon or tuna
  • 200 gram cooked peeled prawns, scallops or firm white fish chunks (or a combination)
  • 4 spring onions, finely chopped 
  • 2 teaspoon chopped fresh or
  • ½ teaspoon dried tarragon
  • 250 ml mayonnaise
  • 2 tablespoon vinegar
  • Lettuce leaves 
  • Chopped parsley
  • 8 tiny tomatoes, halved
