LEEKS VINAIGRETTE

- Trim the leeks, if necessary, to about 6 inch; split lengthways as far as necessary to clean thoroughly.
- Cook in boiling salted water for 6 to 8 minutes, until just tender. Drain well, arrange on individual serving dishes and leave to cool.
- Add the egg and parsley to the dressing and spoon over the leeks.
- Grill the bacon until crisp, then crumble and sprinkle over the leeks.
