WILD RICE AND CITRUS SALAD

Preparation Method :
- Cook the rice according to the packet instructions. Drain and rinse under cold water.
- Combine the remaining ingredients and toss with the rice. Set it aside for about 10 minutes and serve.
INGREDIENTS
- 225 grams mixture of wild and long-grain rice
- 1 yellow pepper, de-seeded and chopped
- 3 spring onions, sliced finely
- 50 grams pine nuts, toasted
- 1 orange, segmented and pith removed
- 45 grams chopped fresh chives
- 50 ml fresh orange juice
- 2 teaspoon Cooking oil
- Salt and freshly ground black pepper, to taste
