RICE SALAD

Preparation Time :
45 minutes

Preparation Method :

  • Place the warm rice in a salad bowl and stir in the onions (scallions), celery and red or green pepper.
  • In a screw-top jar, mix together the mustard, salt, sugar, coriander, lemon juice or vinegar, oil and pepper to taste.
  • Shake well, then pour over the rice and toss gently.
  • Serve this rice salad as an accompaniment or add one of the variations below to make a main dish.

INGREDIENTS

  • 400 gram long-grain rice, cooked 
  • 4 spring onions, chopped
  • 2 stick celery, finely chopped
  • 1 red or green pepper, thinly sliced
  • 4 teaspoons French mustard 
  • 2 teaspoon salt
  • 1 teaspoon sugar 
  • 1 teaspoon coriander seeds, ground
  • 2 tablespoon lemon juice or cider vinegar
  • 6 tablespoons Cooking oil
  • Freshly ground pepper
