- Place the warm rice in a salad bowl and stir in the onions (scallions), celery and red or green pepper.
- In a screw-top jar, mix together the mustard, salt, sugar, coriander, lemon juice or vinegar, oil and pepper to taste.
- Shake well, then pour over the rice and toss gently.
- Serve this rice salad as an accompaniment or add one of the variations below to make a main dish.
INGREDIENTS
- 400 gram long-grain rice, cooked
- 4 spring onions, chopped
- 2 stick celery, finely chopped
- 1 red or green pepper, thinly sliced
- 4 teaspoons French mustard
- 2 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon coriander seeds, ground
- 2 tablespoon lemon juice or cider vinegar
- 6 tablespoons Cooking oil
- Freshly ground pepper
