- To make dressing, place vinegar, mustard, oil, parsley and black pepper to taste in a screw top jar and shake well to combine.
- Combine half the pastrami or salami with the cooked rice, steamed vegetables and dressing. Cover and set aside for about 30 minutes.
- Place rice salad into a salad bowl and top with remaining pastrami or salami strips, the pine nuts and black olives.
INGREDIENTS
- 250 grams pastrami or beef salami, cut into strips
- 220 grams long-grain rice, cooked and cooled
- 220 grams mixed, lightly steamed vegetables
- 2 tablespoon pine nuts, toasted
- 8 black olives, halved and pitted
- Mustard and Parsley Dressing
- 75 ml Cooking oil
- 2 tablespoon wine vinegar
- 1 teaspoon Dijon-style mustard
- 2 tablespoon chopped fresh parsley
- Freshly ground black pepper
