PASTRAMI RICE SALAD

Preparation Time :

Preparation Method :

  • To make dressing, place vinegar, mustard, oil, parsley and black pepper to taste in a screw top jar and shake well to combine.
  • Combine half the pastrami or salami with the cooked rice, steamed vegetables and dressing. Cover and set aside for about 30 minutes.
  • Place rice salad into a salad bowl and top with remaining pastrami or salami strips, the pine nuts and black olives.

INGREDIENTS

  • 250 grams pastrami or beef salami, cut into strips
  • 220 grams long-grain rice, cooked and cooled
  • 220 grams mixed, lightly steamed vegetables
  • 2 tablespoon pine nuts, toasted
  • 8 black olives, halved and pitted
  • Mustard and Parsley Dressing
  • 75 ml Cooking oil
  • 2 tablespoon wine vinegar
  • 1 teaspoon Dijon-style mustard
  • 2 tablespoon chopped fresh parsley
  • Freshly ground black pepper
