Preparation Method :
- Cook the rice in boiling salted water with oil for 30 to 40 minutes or until tender.
- Drain and rinse. Drain the aduki or mung beans, place in a pan and cover with cold water.
- Add the remaining oil, bring to the boil and cook for 30 to 40 minutes, then drain.
- Place the rice and beans in a bowl and add the spring onions, pepper, peanuts, raisins, salt and pepper to taste, mint and dressing. Mix well.
INGREDIENTS
- 250 grams brown rice, well rinsed
- 4 teaspoons Cooking oil
- 100 grams aduki or mung beans, soaked overnight
- 6 spring onions, finely sliced
- 2 red pepper, cored, deseeded and cut into short strips
- 100 grams salted peanuts
- 100 grams raisins
- Salt
- Freshly ground black pepper
- 4mint sprigs, finely chopped
- 300 ml lemon vinaigrette dressing
