LENTIL SALAD

Preparation Time :
10 minutes

Cooking Time :
5 minutes

Preparation Method :

  • Heat the oil in a non-stick pan. Add the onions and rosemary and fry for 5 minutes or until the onions have softened and are beginning to brown.
  • Add the tomatoes and cook at least for a minute or two.
  • Stir in the lentils and vinegar, remove from the heat and adjust seasoning. Serve warm.

INGREDIENTS

  • 750 grams green lentils, drained and rinsed
  • 50 grams small red onions, cut into wedges
  • 1 tablespoon chopped fresh rosemary
  • 2 teaspoons Cooking oil
  • 50 grams plum tomatoes, quartered
  • 1 tablespoon garlic vinegar or white wine vinegar
  • Salt and freshly ground black pepper, to taste
