Preparation Method :
- Heat the oil in a non-stick pan. Add the onions and rosemary and fry for 5 minutes or until the onions have softened and are beginning to brown.
- Add the tomatoes and cook at least for a minute or two.
- Stir in the lentils and vinegar, remove from the heat and adjust seasoning. Serve warm.
INGREDIENTS
- 750 grams green lentils, drained and rinsed
- 50 grams small red onions, cut into wedges
- 1 tablespoon chopped fresh rosemary
- 2 teaspoons Cooking oil
- 50 grams plum tomatoes, quartered
- 1 tablespoon garlic vinegar or white wine vinegar
- Salt and freshly ground black pepper, to taste
