BROWN RICE SALAD WITH CASHEW NUTS

Preparation Time :
20 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Cook the rice in boiling salted water for about 40 minutes until tender.
  • Rinse, drain well and cool.
  • Place in a bowl and add the remaining ingredients.
  • Toss thoroughly before serving.

INGREDIENTS

  • 500 grams brown rice, well rinsed 
  • Salt
  • 6 spring onions, finely chopped
  • 2 red pepper, cored, deseeded and roughly chopped 
  • 100 grams raisins 
  • 100 grams cashew nuts, roasted and chopped
  • 4 tablespoons chopped parsley 
  • 10 tablespoons soy sauce dressing
