BROWN RICE, PRAWN AND NUT SALAD

Preparation Time :
20 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Cook the rice in boiling salted water for 30 to 35 minutes until 'al dente'. Drain and cool.
  • Place the rice in a bowl and season. Add the prawns, spring onions and peppers.
  • Pour over the dressing and stir in the nuts and parsley.
  • Mix well.

INGREDIENTS

  • 150 grams brown rice 
  • Salt
  • Freshly ground black pepper
  • 100 grams peeled, cooked prawns 
  • 4 spring onions, finely chopped 
  • 50 grams green pepper, deseeded and thinly sliced
  • 50 grams red pepper, deseeded and thinly sliced 
  • 4 tablespoons lemon vinaigrette
  • 30 grams cashew nuts 
  • 30 grams flaked almonds, toasted 
  • 4 tablespoons chopped parsley
