BROWN RICE, PRAWN AND NUT SALAD

Preparation Method :
- Cook the rice in boiling salted water for 30 to 35 minutes until 'al dente'. Drain and cool.
- Place the rice in a bowl and season. Add the prawns, spring onions and peppers.
- Pour over the dressing and stir in the nuts and parsley.
- Mix well.
INGREDIENTS
- 150 grams brown rice
- Salt
- Freshly ground black pepper
- 100 grams peeled, cooked prawns
- 4 spring onions, finely chopped
- 50 grams green pepper, deseeded and thinly sliced
- 50 grams red pepper, deseeded and thinly sliced
- 4 tablespoons lemon vinaigrette
- 30 grams cashew nuts
- 30 grams flaked almonds, toasted
- 4 tablespoons chopped parsley
