WARM POTATO SALAD WITH THYME

Preparation Method :
- Cook the new potatoes in boiling salted water until just tender - about 8 to 10 minutes.
- Meanwhile, put the lemon rind and juice, brown sugar, spring onions, olive oil, thyme and garlic into a shallow pan, and heat through until the mixture is just bubbling. Season to taste.
- Drain the cooked new potatoes thoroughly and toss immediately in the prepared dressing.
- Leave to stand for 4 to 5 minutes to give the potatoes the chance to absorb the flavor of the dressing, and then serve while still warm.
