WARM BLUE POTATO SALAD

Preparation Method :
- Put potatoes in a large pot and add cold water. Then add salt. Bring to a boil, then reduce heat to medium-low and cover.
- Simmer until tender, about 15 minutes. Drain and let cool to the touch. Peel and carefully cut into slices.
- Combine potato slices, oil, and vinegar in a shallow bowl and turn gently to coat. Add celery, red onion, parsley, salt, and pepper.
- Gently stir until well mixed. Cover and let stand for 20 minutes at room temperature before serving.
