POTATO, CELERY AND MUSHROOM SALAD

Preparation Time :
45 minutes

Preparation Method :

  • Cook the potatoes in their skins in boiling salted water for about 20 minutes until just tender.
  • Drain, and then peel while still hot. Slice thinly and place in salad bowl.
  • Whip the cream lightly until just fluffy, and then whip in the vinegar or lemon juice and generous salt and pepper.
  • Add the celery, mushrooms, banana and parsley to the potatoes and gently fold in the cream dressing.
  • Serve as soon as possible with whole meal (whole wheat) bread.

INGREDIENTS

  • 1 kg waxy potatoes
  • Salt
  • 250 ml double cream
  • 2 tablespoon cider vinegar or lemon juice
  • Freshly ground black pepper
  • 8 sticks celery, trimmed and cut into half inch pieces
  • 200 gram button mushrooms, sliced
  • 2 small banana, peeled and chopped
  • 4 tablespoons chopped parsley
