POTATO, CELERY AND MUSHROOM SALAD

Preparation Method :
- Cook the potatoes in their skins in boiling salted water for about 20 minutes until just tender.
- Drain, and then peel while still hot. Slice thinly and place in salad bowl.
- Whip the cream lightly until just fluffy, and then whip in the vinegar or lemon juice and generous salt and pepper.
- Add the celery, mushrooms, banana and parsley to the potatoes and gently fold in the cream dressing.
- Serve as soon as possible with whole meal (whole wheat) bread.

- 1 kg waxy potatoes
- Salt
- 250 ml double cream
- 2 tablespoon cider vinegar or lemon juice
- Freshly ground black pepper
- 8 sticks celery, trimmed and cut into half inch pieces
- 200 gram button mushrooms, sliced
- 2 small banana, peeled and chopped
- 4 tablespoons chopped parsley
