Preparation Method :
- Cook the pasta in plenty of boiling salted water for 10 to 15 minutes until tender but still firm.
- Drain in a colander and rinse under cold running water. Drain thoroughly.
- Put the cooked pasta in a bowl, and then add the seafood, mushrooms and tomatoes.
- Pour on the dressing and mix gently.
- Sprinkle with parsley and Parmesan just before serving.
INGREDIENTS
- 500 grams spinach pasta
- Salt
- 200 grams cooked, shelled mussels
- 200 grams cooked, peeled prawns
- 100 grams anchovy fillets, drained
- 100 grams button mushrooms, wiped and sliced
- 4 tomatoes cut into wedges
- 300 ml vinaigrette dressing
Garnish
- 4 tablespoons chopped parsley
- 4 tablespoons grated Parmesan cheese
