PASTA AND FISH SALAD

Preparation Method :

  • Cook the pasta in plenty of boiling salted water for 10 to 15 minutes until tender but still firm.
  • Drain in a colander and rinse under cold running water. Drain thoroughly.
  • Put the cooked pasta in a bowl, and then add the seafood, mushrooms and tomatoes.
  • Pour on the dressing and mix gently.
  • Sprinkle with parsley and Parmesan just before serving. 

INGREDIENTS

  • 500 grams spinach pasta 
  • Salt
  • 200 grams cooked, shelled mussels 
  • 200 grams cooked, peeled prawns 
  • 100 grams anchovy fillets, drained
  • 100 grams button mushrooms, wiped and sliced
  • 4 tomatoes cut into wedges 
  • 300 ml vinaigrette dressing 

Garnish

  • 4 tablespoons chopped parsley 
  • 4 tablespoons grated Parmesan cheese
