TAN PEAR, WALNUT, AND BLUE CHEESE SALAD

- Combine lemon juice, oil, and salt in a small bowl and mix well to make dressing.
- Lay a lettuce leaf on each of 4 chilled salad plates. Place each pear half, flesh side up, on a cutting board and cut long, thin strips three-quarters of the way through.
- Place a sliced pear half on each lettuce leaf, cut side up. Divide the cheese equally among pears, putting a nugget of cheese in each pear cavity.
- Top with a walnut half, then sprinkle with some chopped walnuts. Drizzle with a little dressing and serve.

- 6 leaves round lettuce
- 4 unpeeled tan pears
- 100 grams blue cheese
- 5 walnut halves
