SWEET CORN AND PEPPER SALAD

- Mix the sweet corn with the green and reel peppers. Reserve the larger onion rings for garnish and mix the rest into the sweet corn mixture.
- Put the dressing into a screw-topped jar with the parsley and shake well, then pour over the salad ingredients.
- Arrange the watercress around the outside of a salad bowl.
- Spoon the sweet corn mixture into the centre and garnish with the large onion rings.
INGREDIENTS
- 500 grams sweet corn kernels, drained
- 1 green pepper, deseeded and chopped
- 1 red pepper, deseeded and chopped
- 2 Spanish onion, peeled and cut into rings
- 8 tablespoons French dressing
- 4 tablespoons chopped fresh parsley
- 2 bunch watercress, trimmed
