PERSIMMON AND YELLOW APPLE SALAD

- Cut persimmons in half lengthways, scoop out any seeds with a spoon, and cut halves into 12-mm cubes. Core apples with an apple corer or a small, sharp knife, and cut into slices 6 mm thick.
- Combine persimmon cubes and apple slices in a bowl and drizzle with lemon juice. Toss well, then set aside.
- In a large bowl, combine ground walnuts, vinegar, oil, salt, pepper, and sugar. Stir to blend well. Add persimmons and apples to bowl and toss.
- Serve at once on chilled salad plates.

- 4 unpeeled yellow apples such as Golden Delicious
- 4 teaspoon lemon juice
- 4 Tablespoon ground walnuts
- 3 Tablespoon sherry wine vinegar
- 4 Tablespoon sesame oil
- 1 teaspoon sugar
