ORIENTAL NOODLE SALAD

Preparation Method :

  • Gently fry the mushrooms in the oil for 5 minutes. Drain on paper towels and leave to cool.
  • Drain the arame, reserving the soaking water, and add to the pan with the remaining oil. Stir-fry for 5 minutes. Add the tamari and all but 4 tablespoons of soaking water.
  • Simmer until the liquid has almost evaporated. Spread out on a plate to cool.
  • Cook the noodles as directed on the packet. Rinse and drain thoroughly then toss in a bowl with the sesame oil.
  • To make the dressing, grind 3 tablespoons of the sesame seeds to a powder in a blender. Add to the remaining ingredients with the arame soaking water. Whisk until thick.
  • Divide the noodles between 6 plates, spreading them out in a circle. Make a circle of arame in the centre then pour some dressing over the arame.
  • Top with a pile of cucumber strips and place 3 mushrooms round the edge. Sprinkle with the whole sesame seeds and serve.  

INGREDIENTS

  • 20 yellow oyster mushrooms
  • 5 tablespoon sesame oil
  • 50 grams dried arame, soaked for 2 hours
  • 4 tablespoon tamari
  • 300 grams Chinese cellophane
  • Rice noodles
  • 2 tablespoon sesame oil
  • 1 cucumber cut into matchstick strips

Dressing

  • 6 tablespoon toasted sesame seeds
  • 4 tablespoon tamari
  • 4 tablespoon sesame oil
  • 3 teaspoon rice vinegar
  • 3 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
