MEDITERRANEAN SALAD

Preparation Method :

  • Preheat oven to 180°C (350°F).
  • Cut about 12 mm off top of each garlic head. Drizzle each with a little olive oil, wrap in foil and place on a baking sheet. Bake until soft, about 45 minutes.
  • Let cool, then squeeze garlic from cloves into a bowl. Set aside. Increase oven temperature to 200°C (400°F).
  • Meanwhile, cut aubergine into 12-mm dice and peppers into 12-mm squares. Cut courgette into slices 12 mm thick.
  • Combine vegetables in a bowl and add oil, salt, and pepper. Toss to coat well. Spread on an oiled baking sheet and bake, shaking once or twice, until golden, 20 minutes. Remove from oven and leave to cool.
  • Add remaining oil, salt, pepper, and vinegar to roasted garlic. Mash and mix lightly with a fork, leaving some garlic in chunks.
  • Put vegetables in a bowl or on a platter and pour dressing over, turning to coat. Garnish with basil and pine nuts.

  • 100 ml sesame oil
  • 2 round aubergine
  • 4 red sweet peppers
  • 2 courgettes
  • 4 Tablespoon red wine vinegar
  • 25 grams chopped fresh basil for garnish
  • 50 grams pine nuts, toasted for garnish
