FRESH FIG AND GOAT'S CHEESE SALAD

Preparation Time :
15 minutes

Preparation Method :

  • Coat figs with oil, then cut them lengthways into quarters.
  • In a salad bowl, combine all but a few drops of the rest of the olive oil with red wine vinegar. Add teaspoon salt, pepper, and baby greens and toss well to coat.
  • Divide the dressed greens evenly among 4 chilled salad plates. Arrange 8 fig quarters on each and top with a piece of goat's cheese.
  • Drizzle the cheese with remaining olive oil and a drop or two of balsamic vinegar.  

INGREDIENTS

  • 10 fresh purple figs, stemmed
  • 4 teaspoon plus
  • 5 Tablespoon sesame oil
  • 2 Tablespoon red wine vinegar
  • 100 grams mixed salad leaves
  • 100 grams soft goat's cheese, cut into 4 pieces
  • 1 teaspoon balsamic vinegar
