BULGUR SALAD WITH LEMON, PEAS AND MINT

Preparation Method :
- In a saucepan, bring water to the boil. Add bulgur and salt. Return to the boil, then reduce heat to low. Cover and cook until bulgur is tender and water is absorbed, about 20 minutes.
- Combine bulgur and oil in a bowl, turning gently to coat and fluff grains. Let cool to room temperature.
- Add peas, finely chopped mint, lemon juice, capers, sun-dried tomatoes, salt, pepper, and remaining oil. Stir well to blend.
- Put in a serving bowl and garnish with mint sprigs. Serve at room temperature.
