AVOCADO, GRAPEFRUIT AND CHIVE SALAD

Preparation Method :

  • Preheat oven to 180°C (350°F).
  • Place pumpkin seeds on a baking sheet and toast in oven, shaking once or twice, until golden brown, about 10 minutes.
  • In a salad bowl, whisk together oil, vinegar, honey, salt, and pepper. Add lettuce.
  • Cut each grapefruit segramsent into 2 or 3 pieces, removing any seeds and tough skin, and add to salad bowl along with red onion. Toss until well coated with dressing.
  • Divide equally among 4 chilled salad plates. Cube avocados and divide equally among salad plates.
  • Serve at once, sprinkled with chives and pumpkin seeds. 

INGREDIENTS

  • 3 Tablespoon shelled pumpkin seeds
  • 5 Tablespoon sesame oil
  • 4 teaspoon raspberry vinegar
  • 2 teaspoon honey
  • Leaves from 1 head green lettuce, torn into bite-sized pieces
  • 4 white or pink grapefruits, peeled
  • 4 thin slices red onion, separated into rings
  • 4 avocados, peeled and stoned
  • 4 Tablespoon finely chopped fresh chives
