VEGETABLES A LA GRECQUE

The Vegetables A La Grecque is one of the best recipes that can include in your diet menu. This is less cholesterol and fats, so you don’t have to worry about its substance. You can prepare this recipe for one hour and can serve for eight persons.

Preparation Method :

  • Bring to the boil, then reduce the heat, cover and simmer for 10 to 15 minutes, until the vegetables are just cooked but firm.
  • Remove from the heat and allow the vegetables to cool in the cooking liquid.
  • Drain well and divide the vegetables between 4 individual salad plates.
  • Pour over the lemon vinaigrette dressing and chill in the refrigerator for 2 to 3 hours before serving.

  • 200 grams cauliflower florets, trimmed
  • 200 grams broccoli, trimmed
  • 200 grams carrots, peeled and cut into thin strips 
  • 200 grams runner beans, trimmed and sliced
  • 4 tablespoons lemon juice
  • 2 teaspoon ground coriander
  • 2 teaspoon dried rosemary
  • Salt
  • Freshly ground black pepper 
  • 10 tablespoons lemon vinaigrette dressing
