TURKISH BARLEY SALAD

Preparation Method :

  • Cover the barley with cold water and bring to the boil.
  • Remove from the heat, cover and leave to soak for 1 hour. Drain, cover again with salted cold water, bring to the boil and simmer for 1 to 1 ½ hours until tender.
  • Meanwhile make the dressing: put the lemon juice and salt in a bowl and gradually whisk in the oil. Drain the barley, and toss gently with the dressing. (This can be done several hours ahead of serving.)

INGREDIENTS

  • 200 grams barley    
  • Salt and freshly ground pepper    
  • 4 tablespoons lemon juice    
  • 1 teaspoon salt    
  • 12 tablespoons Cooking oil
  • 1 small cucumber, peeled, seeded and chopped    
  • 8 radishes, thinly sliced    
  • 4 spring onions, shredded into matchstick lengths    
  • 30 grams parsley, chopped    
  • Chopped fresh mint
