Preparation Method :
- Cover the barley with cold water and bring to the boil.
- Remove from the heat, cover and leave to soak for 1 hour. Drain, cover again with salted cold water, bring to the boil and simmer for 1 to 1 ½ hours until tender.
- Meanwhile make the dressing: put the lemon juice and salt in a bowl and gradually whisk in the oil. Drain the barley, and toss gently with the dressing. (This can be done several hours ahead of serving.)
INGREDIENTS
- 200 grams barley
- Salt and freshly ground pepper
- 4 tablespoons lemon juice
- 1 teaspoon salt
- 12 tablespoons Cooking oil
- 1 small cucumber, peeled, seeded and chopped
- 8 radishes, thinly sliced
- 4 spring onions, shredded into matchstick lengths
- 30 grams parsley, chopped
- Chopped fresh mint
