GRILLED VEGETABLE SALAD

Preparation Method :

  • Mix the garlic, cumin seeds and coarse salt and set aside.
  • Put the onion on a plate and set aside.
  • Preheat the oven 180oC/ 350oF/ Gas mark 4; line a baking dish with aluminium foil.
  • Then put the tomatoes in the same baking dish and broil them until the skins blacken slightly; peel off the skins and discard.
  • Put the onion and the bell peppers in the lined dish and broil until the skins are blackened.
  • Then put the peppers into a plastic bag, tie and keep it aside.
  • Remove and discard the charred skins from the bell peppers and the outer layer of the onion when they are cool enough to handle; chop coarsely, add the tomatoes and set it aside.
  • Add the garlic mixture, oil and the lemon juice, stir well.
  • Garnish with egg quarters, olives and dried capers, serve the salad.

INGREDIENTS

  • 150 grams red bell peppers, stemmed, deseeded, halved
  • 250 grams tomatoes, deseeded, halved lengthwise
  • 150 grams green bell peppers, stemmed, deseeded, halved
  • 1 onion, peeled, halved
  • 2 large cloves garlic, finely chopped
  • 8-10 black olives  
  • 2 tablespoon dried capers
  • 1 teaspoon cumin seeds  
  • 2 tablespoon Cooking oil 
  • 2 tablespoon lemon juice
  • ½ teaspoon coarse salt
  • 2 eggs, hard boiled, peeled, quartered lengthwise
