HAM AND PASTA SALAD

Preparation Method :
- Cook pasta in boiling water with a pinch of salt for about 10 - 12 minutes or until cooked. Drain and refresh under cold running water.
- Blanch broccoli in boiling water for 2 minutes or until just softened but still firm to the bite. Drain and refresh under running water.
- Mix ham with olives, celery, pasta and broccoli. Combine mayonnaise and mustard and season to taste with salt and black pepper.
- Add just enough mayonnaise to the salad to bind ingredients together. Cover and chill for 30 minutes.
- Scatter with the chives, basil or parsley and garnish with red pepper strips.

- 2 tablespoon snipped fresh chives, chopped basil
- 100 ml thick mayonnaise
- 1 head broccoli, cut into florets
- 2 canned red peppers, drained and sliced
- 2 thick slices cooked ham, cut into strips 8 black olives, halved and stoned
- 2 stalks celery, sliced
- 2 teaspoon Dijon mustard
- Freshly ground black pepper and Salt, to taste
