BEEF SALAD WITH CUMIN VINAIGRETTE

- To Make Vinaigrette: Place the vinegar, cumin, mustard and oil in a screw top jar and shake well to combine.
- Cut meat into strips. Combine meat with red or green pepper, courgette and onion. Toss through vinaigrette. Cover and refrigerate until required.
- Arrange salad greens on individual serving plates. Place the beef salad on greens and sprinkle with herbs.
INGREDIENTS
- 3 tablespoon chopped mixed herbs
- 6 slices corned silverside or lean roast beef
- 7 red or green pepper, cut into strips
- 1 courgette, sliced
- 6 spring onions, sliced
- Mixed salad greens, washed and crisped
- Cumin Vinaigrette
- 50 ml Cooking oil
- 1 tablespoon white wine vinegar
- 1 teaspoon ground cumin
- 1 teaspoon Dijon mustard
