BEEF SALAD WITH CUMIN VINAIGRETTE

Preparation Time :
10 minutes

Preparation Method :

  • To Make Vinaigrette: Place the vinegar, cumin, mustard and oil in a screw top jar and shake well to combine.
  • Cut meat into strips. Combine meat with red or green pepper, courgette and onion. Toss through vinaigrette. Cover and refrigerate until required.
  • Arrange salad greens on individual serving plates. Place the beef salad on greens and sprinkle with herbs.

INGREDIENTS

  • 3 tablespoon chopped mixed herbs
  • 6 slices corned silverside or lean roast beef
  • 7 red or green pepper, cut into strips
  • 1 courgette, sliced
  • 6 spring onions, sliced
  • Mixed salad greens, washed and crisped
  • Cumin Vinaigrette
  • 50 ml Cooking oil 
  • 1 tablespoon white wine vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon Dijon mustard
