BEEF AND ORANGE SALAD

Cooking Time :
1 hour 15 minutes

Preparation Method :

  • Put the beef in a pan with the orange rind and juice, vinegar, bay leaf and salt and pepper to taste. Pour on the water or stock and bring to the boil.
  • Lower the heat, cover and simmer for 5 minutes for rare beef, 10 minutes for well done beef. Add the mushrooms and simmer for a further 2 minutes.
  • Remove the beef and mushrooms from the pan and leave to cool. Boil the cooking liquid until reduced. Leave to cool, then taste and adjust the seasoning.
  • Cut the beef into strips, and then place in a bowl with the mushrooms. Pour over the reduced cooking liquid and leave to marinate for at least 1 hour, turning occasionally.
  • Arrange the lettuce leaves on a serving dish. Pile the beef mixture in the centre, then strain over the marinade.
  • Mix together the carrot and bean- sprouts and arrange around the beef.
  • Serve cold. 

INGREDIENTS

  • 750 grams lean beef 
  • Finely grated rind and juice of 2 large orange 
  • 2 tablespoon wine vinegar
  • 2 bay leaves
  • Salt
  • Freshly ground black pepper 
  • 500 ml water or stock 
  • 200 grams mushrooms, wiped and sliced 
  • 2 lettuces
  • 2 large carrot, peeled and grated 
  • 100 grams bean-sprouts
