- Place the cottage cheese in a bowl and add the walnuts, sultanas (raisins) meat and salt and pepper to taste. Mix well.
- Arrange the washed and drained lettuce leaves on two serving plates. Place a pineapple slice in the centre and spoon the cottage cheese mixture on top.
- Arrange the cucumber slices around the edge and garnish each dish with parsley sprigs.
- Serve with Hot Garlic Bread.
INGREDIENTS
- 500 grams cottage cheese
- 50 grams walnuts, chopped
- 50 grams sultanas
- 500 grams leftover chicken or lamb, cut into strips
- Salt and freshly ground pepper
- Iceberg
- Lettuce leaves
- 2 slices of pineapple
- 8 slices of Cucumber
- Parsley Sprigs to garnish
