MIXED FRUIT SALAD

Preparation Time :
15 minutes

Preparation Method :

  • Line a serving plate with lettuce and cover with the prepared fruits.
  • Combine ingredients for dressing with cold water and stir until sugar dissolves.
  • Sprinkle over chicken and prawns and toss.
  • Place the bowl with the remaining dressing on the plate so that it may be spooned over individual servings.
  • Serve sprinkled with shallots and peanuts.

INGREDIENTS

  • Mixed fresh fruit
  • 100 ml water chestnuts, sliced
  • 2 chicken breasts or fillets, poached and sliced
  • 6 cooked, shelled prawns
  • Dressing
  • 2 tablespoons sugar
  • 2 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 1 clove garlic, crushed

Garnish

  • 2 tablespoons crisp-fried shallots
  • 4 tablespoons roasted, salted peanuts, crushed
  • Washed lettuce leaves
