AVOCADO AND CORN SALAD

Preparation Time :
45 minutes

Preparation Method :

  • Cut the avocado in half lengthwise, remove the stone (seed) and scoop out the flesh.
  • Reserve the shells. Place the avocado flesh in a bowl with the orange juice and mayonnaise and mash together with a fork.
  • Stir in half the corn, the cheese and ham. Add salt and pepper to taste. Pile the mixture back into the avocado shells.
  • Place on two serving dishes and arrange the remaining corn around the edge.
  • Serve with thinly sliced whole meal bread and butter.

INGREDIENTS

  • 2 avocado
  • 2 teaspoon orange juice
  • 2 tablespoon mayonnaise 
  • 400 gram sweet corn, drained
  • 50 gram blue cheese, crumbled 
  • 100 gram ham, finely chopped
  • Sea-salt and freshly ground black pepper
