APPLE AND CELERIAC SALAD

Preparation Method :
- Put the celeriac into a saucepan and cover with water.
- Bring to the boil, lower the heat and cook for 15 minutes. Drain thoroughly, allow to cool, then peel and cube.
- Mix together the yogurt, mayonnaise, chervil or borage and parsley.
- Add the apple slices to the yogurt mixture with the celeriac.
- Stir to coat and transfer to a salad bowl.
- Sprinkle the nuts over and serve.
INGREDIENTS
- 1 kg celeriac
- 6 tablespoons plain low-fat yogurt
- 4 tablespoons reduced-calorie mayonnaise
- 2 tablespoon finely chopped chervil or borage
- 2 tablespoon finely chopped parsley
- 4 crisp red dessert apples, cored and thinly sliced into rings
- 200 grams cashew nuts, finely chopped
