APPLE AND CELERIAC SALAD

Preparation Method :

  • Put the celeriac into a saucepan and cover with water.
  • Bring to the boil, lower the heat and cook for 15 minutes. Drain thoroughly, allow to cool, then peel and cube.
  • Mix together the yogurt, mayonnaise, chervil or borage and parsley.
  • Add the apple slices to the yogurt mixture with the celeriac.
  • Stir to coat and transfer to a salad bowl.
  • Sprinkle the nuts over and serve. 

INGREDIENTS

  • 1 kg celeriac 
  • 6 tablespoons plain low-fat yogurt
  • 4 tablespoons reduced-calorie mayonnaise 
  • 2 tablespoon finely chopped chervil or borage 
  • 2 tablespoon finely chopped parsley
  • 4 crisp red dessert apples, cored and thinly sliced into rings
  • 200 grams cashew nuts, finely chopped
