MIXED VEGETABLE CURD SALAD (VELLARIKKAI-THAKKALI-VENGAYA PACHADI)

Preparation Time :
15 minutes

Cooking Time :
5 minutes

Preparation Method :

  • In a bowl mix the cucumber, tomato, onion, green chillies, coriander leaves and salt with the curd.
  • Heat the oil and add all the ingredients for tempering. When the mustard seeds splutter, add to the salad.
  • Mix well. Garnish with chopped coriander leaves.
  • Serve cold or at room temperature.

INGREDIENTS

  • 1 medium-sized cucumber, peeled and chopped fine
  • 1 ripe tomato, chopped fine
  • 1 medium-sized onion, chopped fine
  • 300 grams fresh curd, whisked
  • 2 green chillies, chopped fine
  • A small bunch of coriander leaves, chopped fine
  • Salt to taste

Tempering

  • 1 teaspoon cumin seeds
  • 1 teaspoon black gram dal
  • 1 teaspoon Bengal gram dal
  • 2 teaspoon Cooking oil
  • 1 teaspoon mustard seeds
  • ½ teaspoon asafoetida powder
  • 1 dry red chilli, halved
  • A few curry leaves
