MIXED VEGETABLE CURD SALAD (VELLARIKKAI-THAKKALI-VENGAYA PACHADI)

Preparation Method :
- In a bowl mix the cucumber, tomato, onion, green chillies, coriander leaves and salt with the curd.
- Heat the oil and add all the ingredients for tempering. When the mustard seeds splutter, add to the salad.
- Mix well. Garnish with chopped coriander leaves.
- Serve cold or at room temperature.
INGREDIENTS
- 1 medium-sized cucumber, peeled and chopped fine
- 1 ripe tomato, chopped fine
- 1 medium-sized onion, chopped fine
- 300 grams fresh curd, whisked
- 2 green chillies, chopped fine
- A small bunch of coriander leaves, chopped fine
- Salt to taste
Tempering
- 1 teaspoon cumin seeds
- 1 teaspoon black gram dal
- 1 teaspoon Bengal gram dal
- 2 teaspoon Cooking oil
- 1 teaspoon mustard seeds
- ½ teaspoon asafoetida powder
- 1 dry red chilli, halved
- A few curry leaves
