CHICORY AND CUCUMBER MOULD

- Separate the chicory leaves. Put the curd cheese, cucumber and onions in a blender.
- Sprinkle the gelatine over the water in a teacup, stand the cup in a bowl of hot water and stir until dissolved.
- Add the dissolved gelatine to the mixture in the blender and liquidize until smooth. Pour into a deep 7 inch cake tin with a spring clip.
- Put the chicory leaves round the inside edge of the tin in an upright position so that they form a circle enclosing the curd cheese mixture.
- Place in the refrigerator or a cool place and leave to set for about 3 hours. Carefully release the spring clip and lift off the tin.

- 500 grams curd cheese
- 2 cucumber, peeled and sliced
- 2 bunch spring onions, trimmed and finely- chopped
- 30 grams powdered gelatin
- 150 ml water
