CHILEAN CHICKEN AND AVOCADO SALAD

Preparation Method :

  • Put the avocado slices and tomato wedges with the lemon and sugar syrup in a bowl.
  • Arrange the sliced pepper over this. Followed by a layer of chicken; drizzle the lemon-mint yogurt dressing over it.
  • Season each layer.
  • Sprinkle the green chillies and the chives and serve chilled.

INGREDIENTS

  • 250 grams chicken breast, roasted, sliced
  • 1 red bell pepper, roasted, sliced
  • 100 grams lemon-mint yogurt dressing
  • 150 grams large avocado, pitted, peeled, sliced
  • 250 grams tomatoes, quartered
  • 3 tablespoon lemon juice
  • ½ teaspoon sugar, dissolved in the lemon juice
  • Salt and pepper to taste
  • 1 green chilli, finely chopped
  • 1 teaspoon chives, chopped
