CHICKEN SALAD VERONIQUE

Preparation Method :

  • Put the chicken in a large pan with the giblets and the water.
  • Add the onion, lemon rind and juice, ginger, herbs, and salt and pepper to taste.
  • Bring to the boil, then lower the heat, cover and simmer for 45 minutes or until tender.
  • Remove the chicken from the cooking liquid, discard the skin and bones and cut the chicken flesh into neat pieces.
  • Boil the cooking liquid rapidly until reduced. Strain, leave to cool, and then skim off the fat.
  • Stir into the yogurt, add salt and pepper to taste and mix well.
  • Arrange the endive on a serving dish. Top with the chicken and grapes.
  • Pour over the yogurt sauce and scatter the flaked almonds over the top.
  • Serve cold. 

INGREDIENTS

  • 3 kg chicken, with giblets
  • 500 ml water 
  • 2 small onion, peeled and chopped finely 
  • Grated rind and juice of 20 lemon
  • 2 slice fresh root ginger, peeled and chopped 
  • Few thyme or parsley sprigs 
  • 2 bay leaves 
  • Salt
  • Freshly ground white pepper 
  • 300 ml plain low-fat yogurt 
  • 2 head curly endive, separated into leaves 
  • 200 grams green grapes, halved and deseeded 
  • 100 grams flaked almonds
