CHICKEN LIVER SALAD WITH GARLIC CROUTONS

Preparation Method :

  • Heat the oil in a non-stick frying-pan, add the chicken livers and then fry for 2-3 minutes until browned on the outside, but still retaining some pink in the middle. Remove from the heat and stir in the mustard and vinegar.
  • Divide the lettuce leaves and spring onions between 2 serving plates.
  • Rub one side of the toasts with the garlic, discard the garlic and place the toasts on plates. Spoon over the chicken livers and pan juices and serve immediately.

INGREDIENTS

  • 1 teaspoon Cooking oil
  • 150 grams chicken livers, trimmed and halved
  • 2 teaspoons grainy mustard
  • 2 tablespoons balsamic vinegar 
  • 60 grams bag of mixed lettuce leaves 
  • 2 spring onions, sliced 

For the croutons

  • 4 medium slices of ciabatta or french bread (each 2.5 cm/ 1 inch thick), toasted 
  • 1 garlic clove
