CHICKEN AND CRANBERRY SALAD

Preparation Method :

  • Carve the chicken carefully, slicing the white meat. Divide the legs into thighs and drumsticks and trim the wings. Cover with cling film and refrigerate.
  • Put the cranberries in a bowl. Stir in the apple juice, cover with cling film and leave to soak for 30 minutes.
  • Meanwhile, blanch the mange tout, refresh under cold running water and drain. Separate the lettuce hearts and arrange on a large serving platter with the avocados, mange tout, watercress, rocket and the chicken.
  • To make the dressing, put all the ingredients into a small screw-top jar and shake until well blended. Drain the cranberries and mix them with the dressing, then pour over the salad, Serve immediately.

INGREDIENTS

  • 1.5 kg smoked chicken
  • 150 grams dried cranberries
  • 4 tablespoon apple juice or water
  • 250 grams mange tout
  • 6 lettuce hearts
  • 4 ripe avocados, peeled, stoned and sliced
  • 2 bunch watercress, trimmed
  • Small handful of rocket leaves

Dressing

  • 4 tablespoon sesame oil
  • 3 tablespoon walnut oil
  • 4 tablespoon lemon juice
  • 2 tablespoon chopped fresh mixed herbs
  • Salt and pepper
